Sweet root vegetable fusion

Betsy Sheffield I prefer to use sweet potatoes, carrots, and onions in this dish, but the other vegetables make it more exotic for some!
Prep Time: 10 minutes
Cooking Time: 15-30 minutes
Yield: 4 servings
Ingredients:
5 of one or more of the following:
- sweet potatoes
- carrots
- turnips
- beets
- rutabagas
- onions
water
Directions:
Scrub the veggies. Chop the hardest ones into smaller pieces. The softer vegetables can be cut into larger chunks. Place into medium-sized pot and add enough water to barely cover the veggies. Simmer until desired softness (about 15-25 minutes), checking the water level periodically to ensure they are still covered. Remember, the veggies on the bottom will get cooked more quickly than those at the top. The softer the veggies get, the sweeter they become! Drain and season with butter and sea salt, cinnamon, a pinch of cayenne, or whatever spices you prefer.
Yellow, red, orange, or green bell peppers also add a tasty sweetness! Try it today.
