Soak-Ahead Oatmeal

Betsy Sheffield This recipe is affordable and delicious! When I last calculated it, using organic ingredients makes this recipe a mere 10cents per serving!
1 cup filtered water
1 cup organic rolled oats
2 tbsp plain whole milk yogurt, whey, or kefir
Warm the filtered water and mix with the oats and yogurt. Soak in a warm place overnight or up to 24 hours at room temperature (yes, room temp!). In the morning, boil 1 cup of water with a few dashes of salt and 1-2 tbsp butter. Add the soaked oats (liquid and all) to the pot and simmer for 2-5 minutes, until the oatmeal is the consistency you want. Remove from heat. Flavor with one or more of the following: cinnamon, cardamom, nutmeg, cream, butter, raisins, nuts, honey, real maple syrup. Soaking it overnight in yogurt allows for lacto-fermentation of the grains, increasing digestability and making for a quick and hot breakfast!
