Betsy Sheffield Chicken stock, veggies, and spices come together to make a quick, nourishing and warming meal. A great property of homemade chicken stock is its gelatin, which is healing to the digestive system while boosting the immune system. I've written about it in past newsletters, and see my web site for more information (here and here).
The easiest recipes are those that are adaptable to what you have on hand. So here is one for your recipe book: chicken and vegetable soup. Bring chicken stock to a boil, add spices, vegetables and cook till tender, and add chicken meat and cream at the end. So flexible! Try veggies like green peas, corn, tomatoes, broccoli, peppers, green beans, onions, mushrooms, garlic, or any of your favorites. They can be fresh or frozen. Vegetables are frozen at the peak of freshness, so in winter frozen is better.
