Ginger Honey and Lemon Tea

Great remedy for colds and to help digestion!

Prep Time:  10 minutes
Cooking Time: 10 20 minutes

Ingredients:
1” ginger root, grated
¼ cup lemon juice
3 tbsp honey (or to taste)

Directions:
Grate the ginger and put into pan. Add 3 cups of water and bring to boil, allowing to simmer for 20 minutes.  Remove from heat.  Add the lemon juice and honey, stirring to dissolve.  Strain and serve into a warmed mug or thermos. If you don't plan to drink it all immediately, store any leftovers in a glass jar in the fridge, reheating on the stove.
