Delicious and Easy Chocolate Mousse

Betsy Sheffield Your guests will never know that this contains avocado! Use organic when possible.
Prep Time: 10 minutes
Yield: 3 cups
Ingredients:
3 or 4 peeled and pitted avocados
3/4 to 1 cup raw cocoa powder
1 Tbsp vanilla extract
3/4 to 1 cup maple syrup or honey
1/4 tsp cinnamon and/or 1/4 tsp cayenne pepper (optional)
Directions:
1. Put avocados in a food processor or blender.
2. Add remaining ingredients. Blend until smooth.
3. Taste and add more cocoa or sweetener if desired.
4. Serve chilled with fruit slices or in small dishes by itself.
Note: Best chilled for 1 hour or more before serving to allow flavors to meld.

we LOVE this recipe! my oldest daughter is allergic to eggs and nuts and so i always bring her a treat to have at birthday parties when the other kids are having cake. everyone who tries it is shocked it has avocado as a base. i especially appreciate having an alternative treat for her that isnt full of processed soy products- which is what you often get when avoiding eggs.
we do use less honey though- it was too sweet last time and we call it "pudding." thanks, betsy- love the blog and we're going to make some of the kale chips too :-)
Diedre, thanks for your comment! we call it pudding in our house, too. I love that it's so easy and quick to make, and soooo tasty! I agree, it can get too sweet. I make it with maple syrup and use around 1/2 cup to start and increase to taste.
I think I need to go buy some more avocados today... :)
