Chicken Noodle Soup

Prep Time: 10 minutes
Cooking Time: 20 minutes or less
Ingredients:
1 qt. chicken stock
2 c. veggies of your choice
1 small onion, chopped
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp pepper
1 bay leaf
1/4 c. small noodles
1 to 2 c. cooked chicken meat
Directions:
Bring stock to boil. Add veggies, spices, noodles, and cook for 10 to 15 minutes, or until tender. Remove boy leaf. Turn off heat, add cooked chicken meat till heated. Serve with a spoonful of sour cream on top. Makes 8 servings. Experiment with whatever vegetables you have on hand: broccoli, tomatoes, corn, peas, potatoes, etc. For a creamier, thicker soup, use a hand blender and puree the soup in the pot before serving.
